Simple Stuffed Meat Loaf A Delicious Meat Loaf Recipe |

3lbs. Extra Lean Ground Beef or 2 lbs. Extra Lean Ground Beef and 1 lb Ground Pork or Turkey 1 1/2 cups bread crumbs 2-3 eggs 1 onion, chopped 1 green pepper, chopped 1 16oz. pkg fresh mushrooms (rinsed, sliced) 1 1lb. package shredded Mozzarella Cheese 2 Tbsp. garlic powder 2 Tbsp. savory 1 cup Tenspeeds Special BBQ Sauce (listed below)
********************************************** Tenspeeds Special BBQ Sauce ********************************************** 1 8oz. can tomato paste 1 16oz. can stewed tomatoes (Drained/diced) 2 Tbls. onion powder 2 Tbls. savory 2 Tbls. thyme 2 Tbls. garlic powder 1/4 cup honey (1/2 cup brown sugar may be substituted) 2 Tbls. worcestershire sauce 3/4 cup water (add more as needed for desired thickness) Combine in sauce pan everything but honey/brown sugar. Heat to simmer, then simmer 2-3 min. and remove from heat, add honey/brown sugar, let cool. Measure out 1 cup, store the rest in the fridge.

Pre-Heat oven to 350 degrees. In a large mixing bowl, combine meat, eggs, and bread crumbs. Add chopped onions, green pepper, garlic powder, and savory. Mix well. On table, place a large sheet of wax paper. Put meat from bowl on wax paper and shape into rectangle about an inch thick. Spread 1/2 the cheese from the center out to about an inch and a half from the edge. Place sliced mushrooms on top of cheese. Place the remaining cheese on top of mushrooms and roll up into a log. Pinch the edges together and place in a deep pan. Cover and bake half an hour to 45 min. Take out of the oven, drain most of the fat/juice from the pan. Baste with BBQ sauce and return to oven 10-15 min, uncovered. Remove from oven, and let cool 10 minutes. Place in a serving dish and serve with your favorite sidedishes.
