Tip and Sandy's Pigtown Meatloaf A Delightful Twist on an American Classic. |

2 lbs. Ground Beef 2 cups Bread Crumbs 1 1/2 cups Ketchup 1/2 Large Red Onion, chopped 2 Med. Carrots, shredded 2 Med. Jalapenos, shredded 4 Garlic Cloves, chopped 3/4 Can of Campbell's Condensed Onion Soup 1 Tbls. Mustard powder 1 Tbls. Cinnamon 1 Tbls. Pepper 1/2 Tbls. Salt 3 Tbls. Worcestershire sauce

Mix all ingredients together and place in two loaf pans. Spread a thin layer of ketchup on top of meatloaf.
Preheat oven to 350 degrees F. Bake loaves for 45 minutes or until loaves are thoroughly cooked.
Option: Replace Cinnamon with Nutmeg or mix 1/2 Tbls. Cinnamon with 1/2 Tbls. nutmeg.
