Orchata de Almendra (Alomond Orchata) Refreshing Guadalajara Drink |

1/2 cup almonds 2 cups milk 1 1/2 cups water 1 Tbls. cinnamon 3-4 Tbls. sugar, or to taste 1/2 tsp. vanilla extract

Combine water and milk in a saucepan and heat on medium flame.
While water is heating combine cup of almonds and 4 tablespoons of milk in a food processor. Grind the almonds and milk mixture until a chuncky paste is formed. Spoon out mixture into the saucepan of water and milk. Mix thouroughly.
Then allow the mixture to come to a light boil. Allow it to boil for 4-5 minutes. Reduce heat to small flame.
Add 1/2 tablespoon of cinnamon and 1/2 teaspoon vanilla into the heated mixture.
Take the saucepan and allow it to chill.
When ready to serve run the mixture through a coffee filter and to separate the mash from the rest of the mixture. Discard the mash and serve the liquid into a highball glass or over ice and garnish with nutmeg and sliced almonds and enjoy!
