Bacon Cheddar Chive Biscuits Traditional Southern biscuits with a spin |

1 cup of self-rising flour
1 stick of salted butter (softened)
4 ounces of cream cheese (softened)
1 tablespoon of milk
3 tablespoons of chopped chives
3 pieces of bacon, very crispy
bacon grease (from pan)
1/2 cup shredded sharp cheddar cheese
2 tablespoons of melted butter (optional)

1. Preheat oven to 350 degrees (F). Grease a cookie sheet.
2. Cook bacon until very crisp. Crumble into tiny pieces.
3. Finely chop the chives.
4. In an electric mixer, cream together butter and cream cheese, add milk. Slowly add flour and mix well.
5. Add the crumbled bacon, chopped chives, cheddar cheese, and bacon grease (from pan) into the electric mixer. Mix thoroughly.
6. Roll out the dough to about 1/4 inch thick. Use a circle cookie cutter and place the biscuits onto the cookie sheet.
7. Brush melted butter over the tops of the biscuits. (Optional)
8. Bake for 20-25 minutes.
