Banana Bread |

1/2 cup butter (margarine is fine) 1 cup sugar 1 cup mashed banana 2 eggs, beaten 2 cups self-rising flour pinch of salt 3/4 cup chopped pecans(optional)

I make this in a 9x5 loaf pan, doubling the recipe for two loaves. I also make the bread in muffin tins for banana cupcakes. The bread freezes well and makes a great hostess gift. Cream butter, add sugar creaming well. Add bananas and eggs. Mix. Sift flour, soda, and salt together and add to mixture. Stir in nuts. Pour into greased loaf pan. Bake 1 hour at 350 degrees. Let it cool slightly before you cut it. Yummy!
