Tasty Scottish Oat Cakes similiar to Pancakes!
2/3 cup oats
1/2 cup flour
1 egg
1/4 cup sugar
5 oz. milk (1/2 cup plus 1 Tbls)
1/2 tsp. cinnamon
1/4 tsp. soda
1/2 tsp. cream of tartar


Preheat a griddle over medium heat.

Mix the dry and wet ingredients separately in two large bowls. Then stir the wet into the dry carefully to avoid making lumps.

Makes ten or more small oat cakes. Cook thoroughly on each side until done in the middle and the edges turn golden.

Enjoy plain or with Lyle's Golden Syrup.
