Bayou Bacon Bread Louisiana Health Food |

12 thick slices sourdough bread 1 pound thick sliced bacon 6 oz. Louisiana Hot Sauce 6 eggs 2 cups water 1 cup corn meal (course) 1 large jar pickled beats 1 Tbls. salt 2 Tbls. cayenne pepper mayonnaise

Fry bacon until crisp in large cast iron skillet, reserve the grease!
Combine eggs, water and hot sauce in large mixing bowl, beat by hand until very frothy, adding salt and cayenne pepper. While stirring, blend in corn meal, mix well until you have a thick batter.
Take the bread slices, dunk in batter and fry until nicely browned in the reserved bacon grease. Top each piece of bread with a layer of mayonaise, add a layer of sliced beets, then top with bacon slices.
Serve two slices of bacon bread to each person. Serve with chicory coffee and orange juice.
