Cheddar Cheese Muffins Fantastic with Chili or Soups! |

3oz. sharp cheddar cheese, grated 1 large green onion, including top, chopped 1 cup all-purpose flour 1/3 cup yellow cornmeal 2 tsp. baking powder 1 tsp. red pepper flakes (optional) 1/2 tsp. baking soda 1/2 tsp. salt 1 Tbls. sugar 3/4 cup sour cream 1/3 cup vegetable oil 2 eggs

Preheat the oven to 375 degrees F. Grease the muffin cups.
Combine all the ingredients in a food processor and process until well-blended.
Fill the muffin cups 2/3 full.
Bake for 15 minutes. Serve Warm!
Note- These may be frozen for up to 2 months!
