1 1/14 cups of flour 3/4 cup yellow conr meal 1/3 cup sugar (optional) 1 teaspoon or more of grated lemon zest (depends on how lemony you want the muffins) 1/2 teaspoon of salt 1 cup of milk 1/4 cup of vegetable oil 1 egg

Preheat oven to 400 degrees F. Combine flour, corn meal, sugar, lemon zest, sugar, and salt in a bowl. Stir in the milk, oil, and egg. You'll know you're done when there's no lumps.
With Muffin Cups - Lightly spread muffin cups with meleted butter, nut not too much butter, or else muffins might come out soggy. Fill up muffin cups 3/4 full. Bake for 20 to 25 minutes.
No Muffin cups - Spoon batter into lightly greased muffin pan. Fill each 3/4 cups full. Bake each 20 to 25 minutes.
