Country Biscuits

1 1/2 cups flour 1 Tbls. sugar 1 1/2 tsp. baking powder 1/2 tsp. salt 1/8 tsp. baking soda(try with or without) 3 Tblsp. shortening or unsalted margarine 1 cup milk (for a richer taste substitute heavy cream) 1 cup flour( for shaping biscuits)

Heat oven to 475 degrees F. Grease a pan with cooking spray, butter, or however you wish to keep the biscuits from sticking.
In a 2-quart mixing bowl, stir together the dry goods. Blend in the shortening with a fork so that it's mixed very well.
Stir in milk until entire mixture is wet. You may want to let it stand for 2-3 minutes.
Pour remaining flour on the counter, sheet pan, or plate to help form buscuits(for more fun and a little more mess... I like to coat my hands with flour, then I pick up a ball of dough and form it). Form the biscuits by tossing back and forth from hand to hand.
Bake for 15-20 minutes or until the tops are browned to your liking!
