Cranberry Apple Muffins A delightful accompaniment to turkey dinner. |

2 cups minus 2 TBSP all purpose flour 1 TBSP baking powder 2 TBSP granulated sugar 1/2 Tsp salt 1 egg 1/4 cup apple juice 3/4 cup milk 4 TBSP melted butter 1 cup chopped fresh cranberries 1 medium apple, chopped 1/2 cup chopped walnuts

Heat oven to 375 degrees. In a large bowl, sift together the flour, baking powder, sugar, and salt. In another bowl, lightly beat the egg. Add the apple juice, milk, melted butter, chopped cranberries, chopped apple, and chopped walnuts. Mix well. Pour the egg mixture into the flour mixture and stir just until the dry ingredients are moistened. Pour the batter into greased muffin tins. Bake 22 minutes or until the muffins are brown. Makes one dozen muffins.
