Crawfish Apple Muffins Savory Cajun-Taste Treat |

1 cup cooked chopped crawfish meat 1 cup finely chopped green apples 2 cups all-purpose flour 2 tsp. baking powder 1 tsp. salt 2 Tbls. brown sugar 1 cup cornmeal 2 eggs, well-beaten 2 cups milk 1/2 cup vegetable oil 1 Tbls. Louisiana Hot Sauce

Combine flour, baking powder, salt and sugar. Add cornmeal and mix well.
Combine eggs, 1/2 milk, and oil, add to the flour mixture, mix well.
Fold in crawfish and apples, mix very well, adding remainder of milk while stirring mixture. Blend in hot sauce.
Bake in greased muffin tins at 425 degrees F. for about 25 minutes.
Makes a dozen muffins.
Serve 2 muffins to each person with garlic-herb butter.
