Ginger Banana Bread

1 stick butter (at room temperature) 3/4 cup sugar 2 eggs 1 cup unbleached flour 1 tsp. baking soda 1/2 tsp. salt 1 cup whole wheat flour 1 1/2 tsp. cinnamon 1/4 tsp. nutmeg 3 large ripe bananas, mashed 1/4 cup fresh ginger, grated 2 tsp. vanilla 1 cup filberts, or any nut of your choice 3/4 cup chocolate chips (optional) 1/3 cup candied ginger, chopped

Preheat oven to 350 degrees Fahrenheit. Grease 9x5x3 inch bread pan.
Cream butter and sugar until fluffy. Add eggs, one at a time, beating well. Combine flours, baking soda, cinnamon, nutmeg, and salt. Add to wet ingredients, mixing well. Fold in fresh ginger, bananas, vanilla, and nuts.
Pour mixture into pan. Sprinkle candied ginger over top of loaf. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean. Cool in pan for 15 minutes, then remove to a rack. Makes 1 loaf!!
