1 cup flour 3/4 cup whole wheat flour 3/4 cup sugar 1/2 cup oat bran 1 tsp. baking soda 1/2 tsp. baking powder 1/2 tsp. allspice 1/2 tsp. cinnamon 1/2 tsp. ground clove 1/2 tsp. ground ginger 1 cup canned pumpkin 1/2 cup egg substitute (equal to 2 eggs if you prefer) 1/2 cup unsweetened applesauce 1 tsp. vanilla extract

This is a heavier bread due to the healthy ingredients...using an 8x8 pan instead of a loaf pan makes a more uniform cooking bread.
Preheat oven to 350 degrees. Spray pan with non-stick cooking spray. In a medium bowl, combine dry ingredients. In a larger bowl, mix pumpkin with remaining ingredients until well-blended. Stir in flour mixture just enough to mix well and moisten flour. Pour into pan. Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean. Delicious low fat bread!
