Moravian Bread Dumplings Sliced Yeast Bread Dumplings |

1 oz. yeast(cake) 1/4 cup lukewarm water l/4 tsp. sugar l l/4 cup milk 3 eggs 4 1/2 cup sifted all-purpose flour l tsp. salt 4 slices white bread, cut into 1/2 inch cubes

Crumble yeast into lukewarm water and add sugar. Scald milk and cool to lukewarm. Add eggs to milk and beat til foamy.
Combine flour, salt and bread cubes. Pour in milk and egg mixture. Mix well.
Add softened yeast mixture and mix well. Beat vigorously with wooden spoon until dough is shiny, about 10 minutes.
Cover with cloth and set in warm place to rise for 1 1/2 hours or till dough is about 2 1/2 times its original volume.
When dough is light, divide into two parts. Place each half on floured board. With floured hands, roll each half into oval shape(football shape).
Cook dumplings in large stock pot of boiling water 10 minutes on each side. Cook one at a time. Cover with lid during boiling. Remove from water onto large platter and pierce with fork, then slice with a large piece of thread.
These can be frozen and steamed later, also.
Serve with saurkraut or gravy.
