Poppy Seed Muffins

3 cups all-purpose flour 2 1/4 cups granulated sugar 1 1/2 tsp baking powder 1 1/2 tsp salt 1 1/2 cups corn oil 1 1/2 cups milk 3 eggs 2 tsp almond extract 4 tbsp poppy seeds

Heat oven to 350 degrees. In a large bowl, sift together the flour, sugar, baking powder, and salt. In another bowl, whisk together the corn oil, milk, eggs, and almond extract. Pour the milk mixture into the flour mixture and mix just until the dry ingredients are moistened. Stir in the poppy seeds. Fill greased muffin tins.
Bake for 30 minutes or until the muffins are golden brown. Serve warm or room temperature. Makes two dozen muffins.
