Rhubarb Muffins

1 1/4 cup brown sugar 1/2 cup vegetable oil 2 tsp. vanilla 1 egg 1 cup buttermilk or sour milk 2 1/2 cups flour 1/2 tsp. salt 1/2 cup chopped nuts (optional) 1 tsp. soda 1 tsp. baking powder 1 1/2 cup rhubarb, cut fine
Topping- 1 tsp. cinnamon 1 Tbls. butter 1/3 cup sugar

Combine sugar, oil, vanilla, egg and buttermilk. Mix well. Stir in the dry ingredients with the rhubarb. Add nuts, if desired. Spoon into greased muffin tins. Put topping on each and bake at 350 degrees F. for 20 minutes.
