Scrumptous Lemon Muffins Quick, Easy and Delicious! |

1 cup flour 1/2 cup sugar 1/2 tsp. baking soda 1 tsp baking powder 1/4 cup egg whites 1/4 cup canola oil juice of 1 lemon 2 Tbls. applesauce
Topping: butter zest of 1 lemon

Preheat the oven to 375 degrees F.
In one bowl whisk together all of the dry ingredients. Now do the same to the wet ingredients but leave out the applesauce.
Mix the two bowls together and then add the applesuace. Whisk together until smooth, add milk if you need to.
Place evenly into a non-stick muffin pan.
Place in the oven and wait. Once you think they are ready poke them with a toothpick and if they come out clean take them out. Let them cool for about 5 minutes. Gently take them out of the pan and butter them and sprinkle the zest overtop.
Lastly you EAT THEM!!!
