Sweet Potato Biscuits
Look! No Shortening!
3 medium-sized sweet potatoes, baked
1 1/2 cups sugar
2 1/2-3 cups self-rising flour


Mash sweet potatoes and add sugar. Mix in self-rising flour. Add more if needed to make the dough pliable.

Roll out and form or cut into buscuits. Place on a greased cookie sheet and bake in a 400 degree oven for 12-15 minutes. These are delicious when served warm with a little butter or with ham in them!

Preparation Time: 25 min. Serves: 3-4
