2 cups zucchini 2 cups sugar 3 eggs 1 cup oil 3 cups flour 1 tsp. baking powder 1 tsp. baking soda 3 tsp. cinnamon 1 tsp. salt 1/2 cup nuts (optional) 2 tsp. vanilla (optional)

Beat together the sugar, eggs, and oil. Add the zucchini. Stir in the remaining ingredients. Bake in 2 small loaf pans at 350 degrees for 1 hour or until brown.
