Banana Pancakes
dry ingredients:
2 cups flour
1 tsp baking powder
1/2 to 1 tsp salt
1/2 tsp baking soda
1/2 tsp cinnamon

liquid ingredients:
two ripe bananas
1/4 cup oil, shortening or butter
1 egg
1/2 tsp vanilla
buttermilk

 

1. In a large bowl, mix together dry ingredients until well combined. In a separate bowl, mix liquid ingredients well. Add liquid ingredients into the dry and mix with a wooden spoon, adding as much liquid buttermilk as necessary to bring batter to a slightly thin consistency. Do not overmix or they will come out tough and rubbery!!

Optional: Letting the batter stand 30 min will make fluffier pancakes.

2. Heat a lightly buttered griddle over medium high heat. Scoop the batter onto the griddle, using 1/4 cup for each pancake. Brown on both sides.
