Cardamom Oat Muffins a dense, travel muffin with chai spice |

1 1/2 cups oat bran 1/4 cup rolled oats 1 1/2 cups whole wheat flour 1 1/2 tsp baking powder 1 1/2 tsp baking soda 1 Tbsp cardamom 1 tsp cloves 1/2 cup honey 1 cup almond milk 4 Tbsp extra virgin olive oil 150 g greek yogurt

Wet mixture: begin by putting the yogurt in a medium mixing bowl. Thin out with both the honey and olive oil before adding the milk. Whisk to combine thoroughly. Dry mixture: simply combine oat bran, oats, flour, baking powder, baking soda, and spices in a large mixing bowl. Make a deep well in the dry mixture and pour the wet mixture in thirds, stirring in between just until the batter comes together. Using an ice cream scoop, put batter into muffin tins, filling each to the top (because everyone knows there is just something special about those huge, delicious muffin-tops). Bake at 400 degrees for 12-15 minutes, or until a toothpick comes out clean.
