Easy On-Hand Omelet A Relatively Simple and Delicious Egg Dish! |

6 eggs 1/4 cup milk Seasonings Vegetable oil (or any substitute) 1 medium potato 1 small onion 1 tomato 1/2 cup Bacon Bits 1 1/2 cups shredded cheese Any other desired additions

Preheat oven to 350 degrees F. Insert a one-quart baking dish.
Beat eggs. Add desired amount of seasonings. Set aside.
Wash, peel, and dice potato. Dice onion. Fry both in vegetable oil until onions are see-through and potatoes are browned. Add bacon bits and set aside.
Remove baking dish from oven. Grease dish and pour in beaten eggs. Bake for 5 minutes.
Meanwhile, slice tomato and place on the hot frying pan that was used to fry the onions and potatoes. Allow to cook slightly, approximately one minute. Remove from pan and set aside.
Add toppings to the omelet. The potato/onion/bacon mixture will sink to the bottom. Place the tomatoes on top. Season if desired. Continue baking for 15 to 20 minutes, or until eggs are firm.
Sprinkle cheese evenly over omelet. Pace in oven and allow cheese to melt.
Cool and serve.
