Georgia Pancakes Great Tasting Potato Pancake! |

1 cup mashed potatoes 1/2 cup flour 2 Tbls. baking powder 2 eggs, beaten 2 rounded Tbls. chopped onion, optional 1/2 tsp. salt pepper, to taste 3 Tbls. cooking oil

Place cold mashed potatoes (can use leftover mashed potatoes) in a mixing bowl.
Add chopped onions and mix in by hand.
Add flour, baking powder, salt and pepper and mix in by hand.
Beat the eggs in a separate bowl and add into the potato mixture. Fold in or mix by hand.
Take out enough to make a ball about the size of a golf ball and continue doing this until the mixture is used up.
Note: I place the balls on wax paper and set them about 4 inches apart to allow for mashing with a spatula to about 1/2 inch thick. With oil heated in a frying pan or on a grill, place each pattie into it, allowing turning room, and cook each side about 2-3 minutes. Turn and cook remainging side until golden brown.
Serving: Serve with a topping of chopped apple, brown sugar and cinnamon, applesauce, peach or apricot preserves or any of your favorite toppings.
