Grab n Go Breakfast Burritos
Freeze or Refrigerate for Breakfast in a Minute!
10 8-10 inch flour tortillas
1 lb. breakfast sausage
4 medium potatoes
12 eggs
8 oz. shredded cheddar cheese
salt, cayenne pepper and black pepper
your favorite salsa
10 12x12 inch wax paper sheets

 

Dice potatoes and place in microwave safe container, cover with a little water and cook on high in microwave for 5-6 minutes.

Brown sausage in nonstick skillet.

Drain potatoes and add to skillet with sausage, continue cooking until potates are tender and lightly browned. Season with salt and peppers.

Remove sausage and potatoes to large mixing bowl.

Beat eggs and cook over medium low heat in the same nonstick skillet, stirring until just barely done. DO NOT overcook!

Stir eggs into mixing bowl with sausage and potato mixture, add cheese and salsa, mix well.

Lay one tortilla on wax paper sheet, spoon 1/10 of the mixture down center of tortilla, leaving 2 inches on each end.

Fold ends toward middle and roll so seam is facing down on wax paper square. Fold wax paper ends in and roll lengthwise.

Store in ziplock bags in the Refrigerator for 2-3 days or freeze.

Microwave to heat 1-3 minutes.

This is a great handheld, high protein breakfast to get kids and adults to eat on the run. It can be made ahead on the weekend, but beware, they may not last long if you have hungry teens!
