Low-Fat Bacon Egg & Cheese Pancake Muffins delicious and easy breakfast |

2/3 cup HeartSmart Bisquick (or pancake mix of choice) 1/3 cup and 2 tablespoons fat-free skim milk 2 eggs 4 slices turkey bacon, chopped and cooked until crispy* 2 slices American Cheese (like Kraft 2% singles) 1 tablespoon plain yogurt or applesauce (instead of veg. oil)

Preheat Oven to 400 degrees
Scramble eggs and 2 tablespoons skim milk in bowl In separate bowl, combine Bisquick, 1/3 cup skim milk and either 1 tbs yogurt, applesauce, or veg oil
Add 2 tablespoons scrambled egg mixture to pancake mix and blend well with fork until smooth
Cook remaining scrambled eggs, then mix cooked egg and turkey bacon together
Spray muffin pans with non-stick spray, or use baking cups
Add 1/2 tablespoon pancake mixture to muffin cups, spoon egg and turkey bacon mixture into muffin cups
Tear and divide cheese slices; add to muffin cups
Top with remainder pancake mix
Bake at 400 degrees for 10-12 minutes or until lightly golden
Makes 6-8 muffins, depending on size
*Turkey bacon can be substituted with turkey sausage or chopped deli-sliced ham
My kids LOVE these, and they are great cooked the night before and heated for 15-30 seconds in the microwave for a quick breakfast on the go! For an even more special treat, try dipping in some sugar-free pancake syrup!
