Puffed Apple Pancake With Apple Cider Sauce! |

Sauce: 1 cup sugar 3 Tbls. cornstarch 1 tsp. cinnamon 1/4 tsp. nutmeg 2 cups apple cider
Pancake: 6 Tbls. butter or margarine 8 cups sliced apples (about 6 large, tart ones are best, like Granny Smith), cored, peeled, and sliced 1 1/4 c. sugar/cinnamon mixed, divided 9 eggs, large 1 1/2 cups flour 1 1/2 cups milk 3 Tbls. butter or margarine

To Make Sauce: Mix dry ingredients together. Stir into apple cider, stir and cook over medium heat until thickened. Serve warm or cool.
To Make Pancake: Melt butter in 9x13 pan in oven set at 400F oven, add apples and cook until slightly softened(approx. 15 minutes). Add to apples 3/4 cup of the sugar/cinnamon mixture, toss until the apples are coated. While apples are cooking, beat eggs thoroughly, then stir in flour and milk until well blended. The mixture will be thin. When apples are softened, pour batter over the apples and return to oven for 12 minutes. Remove from oven and top with 1/2 cup remaining cinnamon/sugar mixture and dot the top with the remaining butter. Bake an additional 20 minutes until pancake is puffed and browned. Serve immediately with the sauce.
