1 Cup light cream 4 Eggs 6 Slices firm homemade type of bread, cut 3/4 or one inch thick 1/4 tsp. salt Confectioner's (powdered) sugar Vegetable oil or butter for frying.

One of the most popular menu items on Santa Fe Railroad's famous streamliner, The Super Chief, was their luxurious French Toast. Here is a version of that famous recipe.
Cut firm homemade type of bread into thick slices. Trim crusts from bread, and cut bread into triangles.
Combine beaten eggs, cream and salt. Dip bread triangles in the egg mixture, allowing them to absorb as much custard as possible.
Fry in about 1/4 inch oil preheated to 325 degrees F. When one side is golden brown, turn and brown on other side. Turn only once.
Place in shallow baking pan and allow to puff in a 400 degree F. oven for 3 to 5 minutes.
Sprinkle with sugar and serve immediately with syrup, honey, jelly or applesauce. Serves two.
