Seafood Pancakes Savory Sweet Seafood Delight! |

Pancake Mixture: 4 cups all purpose flour 4 tsp. baking powder 1 tsp. kosher salt 2 eggs, slightly beaten 3 cups milk 4 Tbls. melted butter
Seafood Mixture: 3 oz. minced cooked whitefish 3 oz. minced cooked shrimp 1 oz. lousiana hot sauce 1/4 tsp. cayenne pepper

Mix pancake batter in large bowl. Ladle large pancakes onto hot cast iron griddle or skillet, well seasoned with lard (Crisco).
When cakes start to bubble, place small handful of seafood mixture on cooking pancake, pressing down into the batter. When edges are browned, flip pancake and cook until both sides are well browned.
Serve with hot cane syrup and piping hot black coffee.
