Apple Gingerbread
A Deliciously Different Cake!
1 large cooking apple
3 level Tbls. golden syrup
3 Tbls. sugar
180 grams self-raising flour
1/2 tsp. ground ginger
1 egg
90 grams margarine or butter
2 Tbls. sugar, extra

 

Cook peeled and sliced apple with a minimum of water and 2 tablespoons sugar. Cool and mash.

Dissolve syrup, sugar and shortening slowly in a pan. Cool.

Sift flour and ginger.

Beat egg and add to cooled syrup mixture, beat again.

Add flour and cooled apple and mix well.

Bake in a greased, lined 7-inch tin at 375 degrees F. for 25-30 minutes.

Serve with a dollop of cream.

Preparation Time: 20minutess+ Serves: 6-8
