Australian Jubilee Cake An Old Favourite That is Good for the Lunchbox! |

1 1/2 cups self-raising flour 2 oz. butter 1 Tbls. castor sugar 1 cup mixed sultanas and currants (some lemon peel if wished) 1 egg 1/2 cup milk Pinch salt
Icing sugar, lemon juice and dessicated coconut for topping

Sift flour and salt. Rub in butter. Add dried fruit.
Add sugar, beaten egg and milk. Mixture will be stiff.
Bake in a greased loaf tin at 400 degrees F. or 200 degrees C. for 30-35 minutes or until a skewer inserted comes out clean.
Spread with icing sugar mixed with a little lemon juice and sprinkle with dessicated coconut.
Best served buttered.
