125g. soft margarine 10ml. vanilla extract 300g. castor sugar 3 eggs 1/2 cup milk 1/2 cup water 60g. cocoa 2 cups cake flour 2 tsp. cream of tartar 1 tsp. bicarbonate of soda pinch of salt

Preheat oven at 180 degrees C.
Cream the margarine in a large bowl. Add the vanilla extract and mix. Mix in castor sugar unil the mixture is light and fluffy. Add eggs one at a time; mix well.
Mix milk and water and warm it up in a cup(not hot). Mix cocoa into milk and stir so there are no lumps.
Sift flour, dry ingredients and salt together in a separate bowl.
Mix coccoa and flour into margarine a little at a time, alternately. Mix well.
Place mixture in two well-greased, sandwich, cake pans. Place in oven for 35-40 minutes.
Remove from oven and let cake cool off. Then remove from pans. Cool further, then decorate with icing or as desired.
