Black Walnut Layer Cake

2 cups flour 1 teaspoon baking soda ¼ teaspoon salt ½ cup butter ½ cup shortening 2 cups sugar 5 eggs separated 1 cup buttermilk 1 teaspoon vanilla 1 ½ cup chopped black walnuts 1 cup coconut ½ teaspoon cream of tartar ½ cup coconut ½ cup chopped black walnuts

Preheat oven to 350. Grease three 9” round cake pans. In a medium bowl, mix flour, baking soda and salt. In a large bowl, combine butter and shortening. Add sugar, beat until smooth. Add egg yolks to creamed mixture, beat 2 minutes. Add flour mixture alternately with buttermilk to creamed mixture. Stir in vanilla, 1 ½ cup black walnuts and 1 cup coconut. In a medium bowl, beat egg whites and cream of tarter until stiff but moist and peaks form. Fold into batter. Divide between the 2 pans. Bake for 30 minutes. Cool. Frost. Sprinkle top with ½ cup Coconut and garnish with ½ cup black walnuts.
Cream Cheese Frosting ½ cup butter (at room temperature) 1 (8 oz) package cream cheese (at room temperature) 1 teaspoon vanilla 3 ½ powdered sugar
Mix all together until mixture is fluffy and well blended.
