Blueberry Cake Melt-In-Your-Mouth Blueberry Cake |

2 eggs, separated 1 cup sugar 1/2 cup margarine, softened 1/4 tsp. salt 1 tsp. vanilla 1 cup Plain flour 1/4 cup Self Raising flour 1 Tbls. flour to coat Blueberries 1 tsp. baking powder 1/4 cup milk 1 1/2 cups fresh blueberries Cinnamon or Icing Sugar is recommended for dusting cake.

Add all of the ingredients except for the Blueberries to a large bowl.
Add the blueberries to a small bowl and coat with the flour.
After all ingredients are mixed and combined well. Add the blueberries and stir the cake mixture very carefully.
Let cake mixture set for about 1-2 minutes.
Then place in the oven till cake is slightly brown.
After cake is cooked let it cool for 5 minutes before serving.
Dust with cinnamon or icing sugar.
