Coconut Caramel Wafers Finger Food |

1/2 cup butter 1/2 cup granulated sugar 1/2 cup toasted fresh shredded coconut Pinch salt 5 Tbls. flour 2 Tbls. thick cream

TO COOK: Put the butter, sugar, coconut, and salt in a saucepan over a low to medium heat and mix constantly until the butter is completely melted. Make sure the butter does not separate from the rest of the ingredients. Remove from the heat. Add the flour and mix it in thoroughly. Add the cream, and mix well. Place 12 small amounts of the wafer mix onto a non-stick baking sheet, and spread each into small rounds. Bake at about 350 degrees until lightly browned. Remove from the oven and cool. The wafers can be made ahead of time and refrigerated until ready to use.
TO SERVE: Best served with sticky sponge puddings or light sorbet/ice-creams.
