Dad's Blueberry Buckle
Buckle
3/4 c Sugar (5.25 oz)
1/4 c Butter
1 Egg
1/2 c Milk
2 c All-Purpose Flour
2 t Baking Powder
1/2 t Salt
2 c Blueberries

Crumb Topping
1/2 c Sugar (3.5 oz)
1/3 c All-Purpose Flour (1.3 oz)
2 t Cinnamon
1/4 c Butter

 

1. Preheat oven to 370

2. Stir together the sugar, flour, and cinnamon for the topping
3. Cut in the softened butter until the mixture is fairly uniform. Because of the butter it will tend to clump, but all of the clumps should be the same throughout
4. Put in refrigerator until needed

5. Cream sugar and butter on lowest speed until thoroughly creamed and some of sugar has dissolved
6. While waiting for the butter and sugar to cream, mix together flour, baking powder, and salt
7. Add in eggs (one at a time) on lowest speed until the batter is lighter in color
8. Add milk and mix on low speed. Scrape down sides of bowl and continue to mix until none of the batter is on the side of the bowl
9. Turn off the mixer and dump all of the flour mixture into the bowl.
10. Turn the mixer on low just until you no longer need to worry about flour spraying everywhere then turn off mixer
11. Scrape down sides of bowl
12. Turn mixer on high just until all is incorporated
13. Remove bowl from mixer by hand fold in the blueberries
14. Pour batter into a greased and floured 9 x 9 inch pan
15. Put crumb topping on top and spread out evenly with fingers
16. Put in oven for 35 to 45 minutes or until a toothpick inserted in the top comes out clean
