Diced Apple Cake
Won 2nd Place in Cakes at the VA State Fair!
Cake:
2 eggs
2 cups sugar
1-1/4 cups Wesson oil
3 cups diced apples
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. vanilla
3 cups all-purpose flour
Glaze:
1/2 to 1 cup nuts (optional)
1/4 cup butter or margarine
1/2 cup firmly packed brown sugar
1/8 tsp. salt
1/8 cup milk

 

Mix eggs, sugar, oil, apples, 1 tsp. salt, soda, cinnamon and vanilla in a large, mixing bowl and beat until blended. Stir in flour. Grease and flour tube pan. Bake between 45-60 minutes at 350 degrees F. Use a toothpick to test for doneness.

Glaze: Melt butter or margarine in a pan. Blend in brown sugar and 1/8 tsp. salt. Cook over low heat two minutes, stirring constantly. Add milk. Continue stirring until mixture boils. Remove from heat.

Punch holes in cake and pour glaze over cake while still warm and in the pan. Let sit until cool and remove.

The cake it is good without the glaze too! Freezes well.
