Ellie's Methodist Cake
Easy cake with Minimal Ingredients!
1 cup flour
1 cup sugar
1 cup fruit cocktail in natural juices, drained (other canned fruit may be used instead)
1 tsp. baking soda
1 egg.
1/2 cup raisins or nuts (optional)

 

Preheat oven to 350 degrees F.

Grease an 8-inch cake pan (or use cooking spray). If using a glass pan, watch closely for bottom of cake baking too fast.

Combine all ingredients in bowl; pour into pan.

Bake for approximately 25 minutes - cake is done when a toothpick comes out clean in center. Top of cake will be very sticky and cake itself appears dark. Let cool about 10 minutes, cut into slices and enjoy.

It was used during the Depression by my grandmother when she had just a little of certain items to make dessert. From Kentucky.
