Fabulous Fruitcake Moms Quick and Easy Holiday Favourite |

2 1/2 cups (625 mL) all-purpose flour 1 tsp. (5 mL) baking soda 2 eggs, slightly beaten 1 jar (750 mL) mincemeat 1 can (300 mL) Eagle Brand (sweetened condensed milk) 2 cups (500 mL) chopped mixed glace fruit 1 cup (250 mL) chopped walnuts Whole glace cherries for garnish

Grease two 9x5 inch (1.5 L) loaf pans.
Sift together flour and baking soda; set aside.
Combine the eggs, mincemeat, Eagle Brand, chopped fruit and nuts. Add in dry ingredients; mix well.
Divide batter evenly between prepared pans. Bake in preheated 300 F. degree (150 C) oven for 1 hour and 20 minutes or until a toothpick inserted into the centre comes out clean.
Cool 15 minutes before turning out the cakes; continue to cool completely. Garnish with glace cherries.
