Grandma Pritchard's Apple Cake (Gluten-Free)
Apple Cake the perfect GlutenFree recipe!
4 Large green (sour/cooking) apples
140g (5 oz) Plain Flour (Gluten free or regular)
50g (2 oz) sugar
10g (2 teaspoons)of baking powder
170g (24 oz or 1.5 sticks marg (U.S.A.)) of butter/margarine
1 egg slightly whisked
5g / 1 teaspoon of vanilla essence
5g / 1 teaspoon of ground Cinnamon
10g / 2 tablespoons of Apricot Jam (add a little water to dilute if needed)
Splash of milk
Pinch of Salt

 

Prep hint: Put 1/4 lb. (115g) butter or margarine in the freezer at least 30 minutes before for the best results to grate.

Preheat oven to 200°C/375F°.

Sieve together the flour,sugar,baking soda and the pinch of salt.
Lightly whip egg in a large bowl. Add grated butter/marg and mix with vanilla essence and a splash of milk. Carefully mix together using a fork (this will make it light and fluffy).
Now combine with a fork by adding the egg/butter mix to the flour/sugar mix, mix until an even consistancy.
Put mixture into a large greased pie dish. Peel and slice apples, place
slices on top of mixture.
Melt 55g (1/8 lb)of marg/butter pour over sliced apples.
Mix the 50g of sugar with the 5g of Cinnamon and sprinkle over the apple
and butter mixture.

Bake at 200°C/375F° for 30 minutes.

Once removed from oven spread the Apricot jam over to make a glaze.
Best served slightly warm but great cold as well. Always serve with whipped cream. (Grandma's orders)
