Mandarin Cake

2 cups flour 2 cups sugar 2 eggs 2 tsp. vanilla 2 tsp. soda 2 sm. cans drained Mandarin oranges 1 tsp. salt
Glaze: 2/3 cup packed brown sugar 6 Tbsp. butter 6 Tbsp. milk 1/2 tsp. vanilla or almond extract

Spray or grease and flour 9x13 in. baking pan. Beat on high in large bowl flour, sugar, eggs, vanilla, soda, Mandarin Oranges, and salt. Pour into baking pan and bake at 350F for 35 min. Make glaze while cake bakes: combine brown sugar, butter, and milk in small sauce pan. Bring to a boil for 1 min. Add vanilla or almond extract. Spoon over HOT cake (right from oven) starting at outside edges working to the middle. (NOTE: recipe can be reduced by half using an 8x8 in. pan.)
