Queen Cakes (nut free) quick and easy to make, perfect for fussy eaters. |

4oz butter 4oz caster sugar 4oz self-raising flour 2 eggs vanilla escence (optional)

Put the butter and caster sugar into a mixing bowl and stir with a wooden spoon until smooth. Whisk the eggs and then add egg and flour bit at a time, mixing in with the spoon each time (egg+flour, stir then egg+flour... etc). At this point you can add in a few drops of vanilla escence but it's not neccessary. Have out a tray, with roughly 16 cake cases on (it will vary depending on the size of the cake cases). Use two teaspoons to scoop up and scrape the mixture into the cake cases. Place in the oven at around 170-200C for 15-20 mins. This recipie can also be used for chocolate cakes, simply replace around an oz of the flour with coacoa powder (hot chocolate powder is better as it isn't as dry)
