Real Guyanese Black Cake
Quarter pound
1/4 lb each
Raisins Currants and pitted Prunes
10 cherries
1/2 cup
Sweet red Wine
1 cup Red Rum
3/4 cp flour
1/4 cup Brown Sugar
1/4 cup butter
1 bottle
Burnt Sugar
1/2 tsp ground Cinnamon
Pinch of clove
1/4 tsp Baking Powder
3 eggs
1/4 cup Stout
1/2 tsp Mixed Essence






 

Soak fruits in rum wine .and stout
Leave for a few days
For emergency cake prepare same day
Preheat oven to 225 degrees
Grind fruits
Grease and line small cookie pan
Set aside
Blend sugar and Butter until smooth
Whisk egg and essence
In large bowl mix all above ingredients together
Add flour baking powder cinnamon clove
Stir vigorously
Add some burnt sugar until mixture is dark
Pour mixture in cookie can
Bake for one hour
Cool and enjoy!!!
