Rhubarb Coffee Cake Delicious! |

1/2 cup shortening 1 1/2 cups sugar 1 egg 2 cups flour 1/2 tsp. salt 1/2 tsp. soda 1 tsp. vanilla 1 cup buttermilk 2 cups rhubarb, cut up
Topping: 1/2 cup sugar 1 tsp. cinnamon

Cream the shortening and sugar.
Mix in the egg, then add add the flour, salt, soda, vanilla and buttermilk.
Lastly, fold in the rhubarb.
Pour into a greased 9x13 pan.
Topping: Mix the sugar and cinnamon together. Sprinkle over the top of the cake before baking. Bake at 350 degrees F. for 45 minutes.
