Sheila's Purple Ribbon Carrot Cake

3 eggs 2 cups sugar 2 tsp. vanilla 2 cups flour 2 tsp. soda 1 tsp. salt 2 tsp. cinnamon 1 1/2 cups oil 1 cup coconut 2 cups shredded carrots 1 cup crushed pineapple (Partially drained) 1 cup chopped walnuts (optional)

Beat eggs, gradually add sugar and vanilla while beating. Mix together flour, soda, salt, cinnamon. Add to egg mixture. Add oil. Fold in the coconut, carrots, pineapple, and walnuts. Pour into greased 9x13 pan. Bake at 350 degrees for 45-60 minutes.
