Crabit Tablet Candy |

1 large can condensed milk 2lbs. sugar 3oz. butter milk (use empty condensed milk can as measure, add one canful)

Put all ingredients into heavy based pan. Melt slowly till all grains of sugar have melted away. Bring to a slow rolling boil stirring all the time. Boil for 10 to 15 minutes.
You will see the tablet change colour, but don't let it get too dark. Bring off the heat.
Prepare a baking tray about 13x9 by greasing lightly with butter.
Back to tablet - stir with wooden spoon till it begins to thicken now using an electric mixer beat the tablet for about 3 to 5 minutes.
It will thicken even more, use spoon to stir down any bubbles that may have formed. Now carefully pour into prepared tray on an even surface. Leave to set.
Once set, mark the surface of the tablet into serving size pieces.
Remember this is very sweet so you may want to make portions smaller.
Now lay a clean tea towel over the tray, grip the towel firmly and turn tray over so that whole piece of tablet comes out. Break into pieces and store. Delicious with a cup of hot chocolate.
Reason for its strange name. I'm Scottish, and in Scotland being crabit means to be grumpy. My children reckoned that I made the best tablet when I was crabit, so hence the name.
And the recipe works just as well when your not even remotely crabit!
