2 egg whites 2 1/2 cups sugar 1/2 cup light corn syrup 1/3 cup water 1 tsp. vanilla

Line 2 large baking sheets with waxed paper. Place egg whites in a large mixing bowl and set aside.
In a 4-cup glass measure, stir together sugar, corn syrup, and water. Cook, uncovered, on 100% for 4 1/2 to 5 1/2 minutes or until it comes to a full boil over the entire surface, stirring after every minute. Avoid splashing onto the sides.
Without stirring, cook, uncovered on 100% for 4-6 minutes longer, until it reaches the hard ball stage (250-266 degrees-candy thermometer). The syrup should bubble over the entire surface. After 4 minutes, check syrup every 30 seconds. When it forms a hard, but pliable ball, set aside.
Immediately beat the egg whites on 100% until stiff peaks form (tips stand straight). Gradually, pour the hot mixture in a thin stream over the egg whites, beating on high speed and scraping the bowl occasionally. This should take about 3 minutes. Add vanilla. Continue beating on high, scraping occasionally for 3-6 minutes or until it loses its glossy shine.
Drop by spoonfuls onto the baking sheets. Let set. Enjoy!
