Mint Cookie Truffles

2 boxes Girl Scout Thin Mint Cookies (finely ground) 1 8oz. pkg. cream cheese(softened) 1 14oz. pkg. dark cocoa melting chips( melted in double broiler) 20 white chocolate melting chips(melted in double broiler) 2 drops green food coloring
|
Combine cookie crumbs and cream cheese - mixing together by sqeezing with your hands for best results.
Form mixture into 60 1-inch balls and place on pan in freezer.
Freeze while melting the chocolates.
Color melted white chocolate with 2 drops of green food coloring and reserve for later use.
Dip balls into dark chocolate and place on wax paper.
Drizzle with green chocolate.
Allow to set and Enjoy!
