Southern Pecan Roll Old-Fashioned Goodie! |

1 cup cream 2 cups sugar 1/2 cup white corn syrup 1 cup light brown sugar 1 1/2 cups pecan halves or pieces
|
Boil cream, sugars, syrup to a soft boil (234-238 degrees F.). Cool to room temperature, then beat until creamy.
Turn out onto a board covered with powdered sugar and knead until firm.
Shape into a roll or log and cover the outside with pecans. Put in a cool place to harden.
When firm, slice into serving pieces with a sharp knife. Note: Pecan Pieces can also be worked into candy roll while kneading.
