Toffee from Sweden Extremely delicious! |

1 cup caster sugar 1 cup light syrup 1 cup whipping cream 0.5 cups chopped almonds or hazelnuts 90 small toffee moulds
|
Mix sugar, syrup and whipping cream in a saucepan with a thick bottom (to make sure the mixture won’t burn).
Let it boil for about 45 minutes until mixture is chewy.
To find out if toffee is ready try “the ball test”. Put about a teaspoon of the mixture in a cold glass of water and then see whether you can form it into a ball easily. Then it’s ready! Otherwise, you have to let it boil some more.
When toffee is ready add chopped almonds or hazelnuts.
Put the mixture into small toffee moulds and leave the toffee to set.
Store it in a can with greaseproof paper between the layers.
